






































Bakery rack casters take more punishment than almost any other cart caster in a retail environment. Pan racks roll loaded into and out of ovens, hit oven gaskets, then come back to room temperature, then heat up again on the next bake. Cheap polyurethane wheels soften and flat-spot. Per the P&H Casters Retail Guide, the bakery casters supplied to factory bakery rack OEMs are the Z20P254CLDE, Z42P352CLPL, Z40P382CLPL, and the high-temperature WL4052BZ phenolic and W22043N0B silicone wheels for the inside-oven rack positions. The 5-inch CLDE family is the standard pan-storage and proofing-rack wheel; the 8-inch CLPL is on the largest commissary racks; and the phenolic and silicone wheels are reserved for the wheels that actually enter the oven.

Lay a ruler across the face of the wheel from one outside edge to the other, through the center of the axle. That is the wheel diameter. Then measure the axle hole through the hub center: most US carts are 5/16 inch, but some specialty carts use 1/2 inch. Tread width is the thickness from inside face to outside face.
